All you peppermint lovers out there, this cookie is for you! The chocolate wafers get their extremely dark colour from the addition of black cocoa powder. Sandwiched between the crunchy wafers is a dollop of minty icing. To tie these sandwich cookies together, they are double-dipped in coloured white chocolate.
